It’s a great day for tacos!

How about trying a homemade recipe for taco seasoning?

Why would you do THAT when there are packets of taco seasoning you can purchase at the store for less than a dollar, which would also make your life so much easier?

It’s simple really – It’s healthier.

A few years ago, we discovered that my oldest son has hypertension. He was 15 years old at the time. I began really evaluating our lifestyle, and food was at the top of the list.

We love Mexican Food.  Seriously, we eat it several times a week.

I quickly realized that I would have to start cooking a lot of what we eat from scratch, and that included tacos. You can purchase prepackaged lower sodium taco seasoning, but have you tried that stuff? We did. Once. That was enough. Blah!

Some things have to be salted. They just do. Being able to control the amount of salt is key and by making my own taco seasoning, I control the amount of salt we use. Yes, you can add salt to the prepackaged stuff, but still, homemade taste so much better (even if you use no salt at all – and each person salts his or her own – it still tastes much better). It’s easy to make with ingredients that are not hard to find and you can make a large batch at a time.

After reading and researching taco recipes, and through trial and error, this is what I came up with.

Homemade Taco Seasoning
(makes about 5 tbsp)

What you need:

2 tbsp chili powder
1 tsp garlic powder
1/2 tsp onion powder
1/4 tsp red pepper flakes
1/4 tsp oregano leaves or ground oregano (this ingredient is really optional, I think it adds a nice flavor)
1 tsp paprika
2 tbsp ground cumin (maybe a touch more, I heap my spoon a little because I love cumin)
1/2 tsp salt (or salt to your taste)
3 lbs ground meat (beef or turkey)
1/2 – 1 cup water (optional)
Hard Shells
Soft Shells
Cheese
Sour Cream or Plain Greek Yogurt
Lettuce and Tomatoes or any other veggies you prefer.

*I read a lot of different recipes and played around with the portions until I got what I liked. You do the same…..Play around with the portions, omit an ingredient or add an ingredient, until you get the perfect flavor for your family.  MAKE IT YOURS!*

**I do not salt heavily so you may find that this amount of salt is not enough. I tend to add a little more salt if I am cooking with turkey meat.**

Mix seasonings together.

Makes 5 tablespoons. Stores wonderfully in an air tight container.

You can use as much or as little of this to season your meat. Season to your tasting. I typically use all 5 tablespoons when I cook 3 pounds of meat. When I cook less meat, I usually divide it into about 1 1/2 tbsp per pound of meat.

Sometimes, I cook fajitas along with the taco meat. When doing this I usually only cook about 2 pounds of ground beef or turkey, then I split the seasoning; 3 tablespoons for the ground meat and the rest for fajitas (depends on how much chicken or beef I am using).

Next, brown the meat and drain.

When I am not able to use lean meat, I drain then rinse meat is very, very hot water to get rid of as much grease as possible.

I put the meat in a colander on a plate and let it drain. When I use more fatty meat, I also rinse the meat in very, very hot water to remove as much grease as possible. I do, however let the meat drain on the plate first, then rinse it. I don’t want to clog drain pipes with grease.

Mix seasoning and meat together. I mix it really good, then add a half – whole cup of water. This really depends on if you want a dry meat or not. I usually start with half a cup and keep adding till I get it as moist as I want it.

Mix together thoroughly.

Let it cook on low for 5 minutes or so.

Fill your tacos, top with whatever your like and most importantly, ENJOY!

  1. I usually scramble ground beef and add salt and pepper with oregano and turmeric. Then I top with mashed avocado and lemon. Then everyone can add their own toppings. Thanks for being a part of Let’s Get Real Friday.
