You Know You’re From The South If You Eat Biscuits and Chocolate Gravy

You know you’re from the South if you eat biscuits and chocolate gravy for breakfast!

This was a staple in my grandmother’s house. When my sister and I would spend the night with my grandmother, not a morning went by that we didn’t have cat head  biscuits and chocolate gravy. It was also a staple in my husband’s grandmother’s home. I was pleasantly surprised to learn that he also loves chocolate gravy. Needless to say, it is now a staple in my home.

Once in a while, I’ll run into folks from the South who have never had biscuits and chocolate gravy. (Say what! How could that be possible?) They usually say something like “You have chocolate for breakfast?!?! And then there are those who are from the South but do not like chocolate gravy. This is strange to me.

This certainly will not win any healthy food prizes and its best not to eat it very often but it sure is good! I fix biscuits and chocolate gravy about once a week. That’s not too often, is it?  😉

Everyone has their own way to make biscuits and chocolate gravy….here’s mine.

For biscuits I use:

2 cups all purpose flour

1 tablespoon aluminum free baking powder

1 teaspoon salt

1 teaspoon sugar

1 stick butter (real butter)

1 cup (sometimes a little more) milk.

Mix flour, baking soda, salt and sugar together.image

Next, cut the stick of butter into cubes. Now, most of you know a lot more about cooking than I do BUT… there are those newbies out there that do not know tricks in the kitchen. I’m still learning. Some of these I’ve had to learn the hard way, some tips I’ve learned from recipes online, and of coarse, I’ve learned a lot from YouTube. Here’s one of those tricks. Cutting the butter can be a little difficult, especially when it’s cold. I usually let the stick of butter sit on top of the stove while it is preheating. That warms the butter and makes it easier to cube up and to mash up into the four. 🙂

Cube it up and add to dry ingredients.imageMash it up (I use a fork), it will look similar to meal when you are done.image

After mashing the butter up into dry mix, add 1 cup of milk. image

Dump dough out on floured surface.

Kneed dough and press out. The thickness depends on how thick or big you want your biscuits. I press it out till it’s about 1/2-3/4 of an inch thick. I don’t bother with a rolling pin, I just use my hands.image

I don’t have a fancy biscuit cutter so I use a mason jar ring. That makes perfect size biscuits for us.imageimage

Put biscuits on baking pan and bake for 10-15 minutes at 450 degrees.image

For the chocolate gravy I use:

1 1/2 cups of sugar

4 or 5 heaping tablespoons cocoa (The more cocoa you use the more like dark chocolate it will taste and the thicker the gravy will be.)

1 1/2 cup of milk (As a general rule I use equal amounts of sugar and milk so if I want to make less, I would use 1 cup of sugar and 1 cup of milk.  Same goes for making more. Of course you would want to adjust the cocoa to your liking as well.)

Mix the cocoa and sugar together.image

Add the milk and DO NOT stir! Do not stir until the mixture has come to a rolling boil. This may seem like overkill but DO NOT stir! I promise, it does make a difference! In my experience, this prevents clumps. (It tends to boil fast and can boil over easily so stay with it.)image

Ok, it’s safe to stir now. You can’t really tell in the picture but the chocolate has come to a rolling boil and I’m ready to stir it now. 🙂

It depends on how quickly we need to eat breakfast as to how long I let it boil. You can eat it after it has only boiled a minute or two or you may boil it longer. Whatever you like. image

Well, there you have it….our biscuits and chocolate gravy. (By the way, you can do AMAZING things with the leftover chocolate….think peanut butter)

    1. Danita….sometimes, while everyone else is eating the chocolate gravy with biscuits, I enjoy it with a banana. Sometimes though, it’s hard to turn down the biscuits 🙂

  1. My grandma was as southern as they get but I had never heard of chocolate gravy with biscuits until I went to a friends house as a teenager. It was delicious!! I am definitely going to make this!!
